But if I read that on first impressions, I would have been expecting a thicker noodle for the first and a thinner noodle for the latter. They could also really mix up the flavours, come on....

That would increase the cost per bowl.
From what I can see, its 2 people behind the partition, and the broth comes in 2 big cauldrons, noodles are the same, veg is the same, but just the broth, (one meat based, one vegetarian base), they buy everything in bulk, so cheaps.
2 types of noodes, ie, the yellow and then if people wanted the white vermicilli, will all raise the min cost per bowl.

I forgot this thread existed.

This one was from about two weeks ago. Wonton soup. Pork or vegetable wontons. I added the pickled vegetables on top.

Pretty ordinary. Wontons obviously boiled well in advance, but because of how much time they had been sitting in broth or reheated, the skin was starting to fall apart, so combined with their small size and you only get one or two per bowl, it's not very satisfying. Soup is light (not overly salty); it would have overall made a nice snack, but definitely not a meal. Not sure if it's normal for them to boil noodles to order, but they were good, weren't all soft and falling apart, if just shorter than desirable.
