Coles' 'stocklotto' is annoying, but as you note, the dollar amount of the discount stays even if the item is out of stock. You can use this in your favour by comparing stock levels in Coles and the relevant LL/FC/VC store. ;)
This doesn't always work btw. Today LL said zero stock shortly before my order was picked (1 earlier), but Coles magically found 2 when they picked the order (still less than what I ordered). I know what store it came from, as delivery had tracking. So this 'trick' is helpful, but don't treat it as gospel.

True that. I ordered some pale ale a few weeks and while the specific variety I ordered was out of stock, the Coles/LL store substituted a slightly different pale ale from the same brewery (they shouldn't have but anyway...)

Moral of the story - don't order anything you don't want to drink!
