Had the brined chicken again tonight, so good.

Watching James and Jimmy's Food fight recipe for carbonara cake, looked delish, will have to try, so many variations possible.

Tonight was slow cooker chicken and super tender and yummy.

I stuffed chicken with sage, garlic and onion stuffing, rubbed a mixture of paprika, garlic, parsley & butter all over and put some garlic & sea salted butter under the skin and slow cooked for 8hrs and served with roasted veggies.

OK - NO photos ! I keep forgetting to have the camera/phone near by ! ........BUT ..... we had Denali Ribs again tonight. ( thats what we call them )

Slow cooker pork ribs cooked in Sweet Baby Rays Hickory sauce. I also add one glass of white wine and 2 cloves of jumbo garlic sliced finely.

OMG we are both in porked heaven ATM.

Oh by the way Ron nearly got killed tonight - he spilled sauce on the chair - it is Jim Thompson material from Bangkok !! luckily I got it off before ..... so next time he is sitting on a towel 🤪 🤪

I had left over steamed rice from Friday night and left over sage & onion stuffing from Saturday night so on Sunday I made mozzarella arancini balls. Should have put more cheese in them (I usually mix cheese into the rice but forgot) but still yummy and all gone, mum in law had 3.

Because I plate like rubbish I didn't take a pic but it was very tender and yummy and no left overs for pies (sent some to mum in law as well)

Yesterday I made a batch of lasagna, some to give to friend who just had a baby and one to mum in law, and today I'm making fried chicken.
