Tried and true favourite recipes

Pancakes/Pikelets (Sugar free😉, flour free, Gluten free)

Makes a generous serve for 2 people, small serve for 4 people.

Ingredients:

60g Almond Meal
125g Cream Cheese
4 eggs
1tsp sweetener (+/- to taste - I will use more next time)
1/2tsp baking powder
(optional 1/2tsp cinnamon powder)

Put all ingredients in blender and blend well. Or beat well on high speed until really smooth & creamy if using cake mixer.

Cook medium heat in buttered or oiled fry pan

I just used Nagi's method for poaching chicken, delicious and moist! I had never seen her site before.
 
I just used Nagi's method for poaching chicken, delicious and moist! I had never seen her site before.
She has so many fabulous recipes. We've enjoyed the hot smoked salmon risoni a few times and I did the chinese noodle soup on Sunday night.
 
Her way of poaching chicken is to bring the water containing garlic lemon and herbs to the boil add the chicken breasts and then turn off the stove remove the pot and leave for about 40 mins. I was very skeptical, but the chicken was the most moist chicken I have eaten. Amazing!!

I will be checking out more of her recipes.
