Tried and true favourite recipes

I was asked for Mr Katie's gyoza recipe, and handily, it's on the internet:

He also picked up a tip to glaze them in sesame oil before cooking somewhere along the way.

We have them with dipping sauce that each person mixes for themselves - soy sauce, rice wine vinegar and some chilli oil.

Todays fritter recipe, I added extra veggies because I like veggies so I doubled the ingredients to share the results with inlaws. Was thinking next time to add a sprinkle of sharp parmesan into the mix, not much.

My very expensive (not) pie maker arrived today - I'm going to have a play on the weekend - don't have all the ingredients for that but when I do the shopping next week that looks good
 
Lemon & Poppyseed Muffins (sugar free, gluten free, keto)

Preheat oven 180C

Mix Dry Ingredients together until well combined:
  • 3/4 cup almond flour
  • 1/4 cup flaxseed meal
  • 1/3 cup erythritol (+/- depending on how sweet your tooth is)
  • 1 teaspoon baking powder
  • 2 tablespoons poppy seeds
Add rest of ingredients and mix until well combined:
  • 1/4 cup melted butter
  • 1/4 thickened cream
  • 3 large eggs
  • zest of 2 lemons
  • 3 tablespoons lemon juice
  • 1 teaspoon vanilla essence
Split mixture into 12 patty pans or greased muffin tray

Bake around 18-20 mins - no longer

Edit above - probably better just using section muffin pan or non-stick silicon muffin tray

One of aunt's fruit bar recipe

250g butter

1 cup sugar

2 cups SR flour

pinch salt

¾ cup coconut

½ cup chopped nuts (walnuts, pecans, almonds – doesn’t matter)

½ cup chopped dates

¾ cup chopped dried apricots

Optional – add ½ cup choc bits

Put all ingredients except butter in a bowl. Pour melted butter over and mix well.

Put in a slice tin (27 x 17 cm) and press down with the back of a spoon.

Bake in a moderate oven for 35 minutes.

Thank you for this recipe. They were delicious. Some for us, some for son and some for daughter.
 
To continue the theme of beans, pleased with this, saw a show on Greece (Rick Stein Venice to Istanbul) on SBS recently.

Only decided to make it halfway through the day so the butter beans were only soaked for a few hours rather than overnight, but still more than pleased how it turned out.

Could be very versatile too, would go great with chorizo or chicken.

Another vego one of late, can attest the tahini crust is absolutely magnificent and have incorporated it into many other recipes!
