Virgin had sprits last June in B/C..QF has used Covid to the upmost for cutting anything that looks like service.
When I flew Virgin business back in December, I was absolutely floored by the pre-departure beverage service. It wasn't merely limited to the obvious stuff like champagne or water but covered a lot of things you wouldn't expect like hot chocolate. Now look, I'm not a heavy J flyer, I've flown a handful of airlines in J before: NZ, AC, UA, LH, BA, AS come to mind. But to the best of my recollection crew on these flights have always only provided a limited subset of drinks. This along with the competitive fares and upgrade options and better on board meal would certainly tempt me towards flying Virgin more often.

Speaking specifically of spirits on QF, I would be curious what is ordinarily on offer flying J with them. Is it the obvious stuff like gin & tonic or do they have their own custom mixes? For instance, SQ has the Singapore sling and UA has their famous Old Fashioned.

Good, the Ginger Beer is my go-to when I don't want an alcoholic drink.
As somebody who doesn't drink Alcohol and was really missing the Bundaberg, I can share with you this photo on tonight's QF651 from SYD to PER (posting this from inflight WiFi, in fact).

They publish "coughtails" on international flight menus but they're all basic drinks like G&T, V&GB, Campari & Soda and Bloody Mary (I'll note that neither example you gave are unique to those airlines, both are popular coughtails in their own right). But QFi (longhaul) has a pretty comprehensive collection of spirits and liqueurs and could probably make you something like a Negroni, Martini or a Manhattan - or even an Old Fashioned, but I don't think that's really the done thing; they're not mixologists. - maybe in F.

I think a Bloody Mary is probably the most adventurous you'll get on domestic / TT - it's generally spirit & a mixer. Or champagne based is cool too - so Mimosas etc.

No. See my post above for QFi (but again, it’s no).

Most people order a basic spirit and a mixer - gin and tonic, vodka and soda, rum and coke etc are the norm. They do Bloody Marys and Mimosas as well.
 
There is a Qantas spritz. Very very nice. Should be available in domestic as far as I'm aware.
It’s a premixed can that contains no spirits. Bit of a stretch to call it a coughtail.

And I’ve never seen it offered so I can’t comment on the taste. I generally avoid canned premixed like the plague.
 
With respect to the reported comment that spirits are available "On all flights departing after 9am", what is the current experience out there? I am on a flight departing AT 9am...... does this mean no spirits at all because flight departed "AT" not "AFTER"...... or are sprits served after 9am?
 
Can confirm Alliance operated QLK also has spirits. And they let me self mix which was nice.

Initially told me no ice was loaded (as per the photo) but they found it in economy’s trolley for round 2.

When commenting on the return of spirits (or for them, the launch) the FA said “I’m not a bartender, I guess I’ll have to learn!” 7DC07AE0-07B9-41F5-80AE-AFB570E23BD9.jpeg
