I'd say by looks that the version on offer in Melbourne is a distinctly smaller and simpler version.
 
Does the “hot and numbing” chicken actually have numbing (Sichuan) peppercorns in it? NP’s former haunt Spice Temple used to always use actual sichuan pepper for those dishes but I highly doubt it in the lounge- might be wrong though?

That is the most unappealing take on Hainanese Chicken rice I have ever witnessed. Shame on NP for desecrating this traditional dish.
I suspect he’d be disappointed with the plating.
 
What is the liquid it's swimming in?!
I was guessing it may be part of the chicken broth that has mixed in with the chilli (e.g. the broth was ladelled on top), causing it to turn that colour.

While there are a few variations of chicken rice, traditionally it is served as rice (sometimes plain, sometimes flavoured), white cut chicken, sauces (chilli, soy, ginger and garlic, etc.) in separate little dishes and a bowl of clear broth (used to cook the chicken) on the side. But try handing over 3-5 dishes of stuff to every patron.
 
I had the chicken rice today too. I believe they had three sauces to dish out at the counter: chilli oil, chilli sauce and ginger oil.. I added fried onions and soy sauce from the bar.

I call it an acceptable take on chicken rice. The chicken is not served room temp as it would in Singapore, but with food safety regulations it probably can't be. It was just poached chicken breast with flavourings and rice really. Wasn't overcooked either, I'd have it again.

Agree with your sentiment. I had this earlier this evening as well, but in my case it was just the ginger oil/sauce and chilli oil that was ladled over the top. Watched them do it and definitely no third sauce for my serving.
