Chalk and cheese. Wynns 'would' have been ok but by comparison... BindiBuys stick with the original! ;)

Friday night Chardonnay: this is drinking very well now. Has opened up a lot in 6 months. With roasted maple syrup marinated salmon fillets and potato, mushroom, Cos and other weeds salad.

Red wine vinegar, rosemary, shallots, lemon juice, lemon zest and olive oil vinaigrette on the left. Thyme for the salmon cover when roasted in 2 hrs time... Hmm might need another bottle!

Ed: hour later it's even better. 'Luscious' would be a good description.

Tonight's red from the recent Epiqure Winter Warmer Mixed Red Dozen. A nice, big smooth Barossa shiraz.

I tried my first straight Aussie Malbec tonight (direct from JohnM's cellar) a 2013 by Bremerton of Langhorn Creek. On advice I paired it with a (Tassie) lamb roast.

I'm enjoying it - it's far more than a quaffer - smooth, early fruit finishing with gentle tannins. It is a baby and obviously it would only get better with age. I suspect I would like Argentinian Malbecs Iv heard so much about.

Glad you enjoyed it, Steady! Mate, let me assure you - you are a natural to appreciate some cracker Argy Malbecs with some of those petite steaks they have over there ;):). Start the trip planning - NOW! I'm looking at heading back to Chile/Argentina in early 2017, with Mendoza and Salta firmly in the sights after a week of small-boat cruising the southern Chilean fjords!

Paging Rooflyer for a boys' week or two ;):cool::mrgreen:.

The immediate reaction may be: 'Tower Estate, Hunter Valley, Pinot Noir? nooooooo!' but a closer look reveals that this winery of Len Evans fame is dabbling in Tassie.

Here's the back label marketing BS:

It was pretty good but didn't have (presumably had lost) fruit definition. The more often that I open Tassie Pinots beyond about 4-5 years, the more I feel that - broadly speaking - they are best drunk young.

A nice Rose that I picked up when I visited the lower parts of the Napa Valley last year. Just a touch of sweetness made it a perfect match with Indian food.

I tried to get a clear photo, TV, but iPad pics seems to not be as clear as they once were. It's written on the bottle.;) yes 2008.

Maybe iPad needs cataract op.

Maybe iPad needs cataract op.

Could just be that my screen resolution isn't up to scratch

Enjoyed the Maverick Twins GSM last night (last bottle of the 2011). Tried out our other new aeroator. Quite a nifty thing (reminds me of a duck bill), easy to use, no drips, and opens up the wine quite nicely.

The little graph on the back suggests it is better than the Vinturi.

Ah so it's the last item then! :) How can I now keep my DYKWIA status amongst friends. Out with my Vinturi then! :)

We should just use a large salad bowl, pour in the wine, aerate it with a whisk then put back in the bottle. I've got strange looks in restaurants for aerating a recently opened wine by gently inverting the bottle (with cap or hand over the top:) ) several times.:)
