You basically need to provide a letter signed and agreed by all parties that you and not your wife are responsible for all rents

They want a copy of bank statement. Shouldn't latest 2 payslips be enough? There is no way I'm providing them a copy of my statement. Where I spend my money is none of their business. I have provided a screenshot of bank account with incoming and outgoing for the month.

It's all these intrusive littke things that have become a prerequisite to do anything today.

Visa applications doing this too........... Brazil, Indonesia, etc. I'm sure there's more.

Is this quite normal now or always has been?

The way I see it, things like signing for a new rental, applying for a credit card, a loan or a visa, despite the supposed increased awareness of privacy principles, can now demand more data and not be unpopular enough that people would actively avoid it.

Anyone can refuse to supply personal information if, in their opinion, it is not necessary in determining an outcome, but I'm guessing that deciding who gets to rent a place is a competition, so those who follow all protocols will, on average, stand a better chance than those who do not.

I have a recipe (it's for a sauce) that just requires a dash of brandy.

The smallest amount of brandy I can get at the bottle-o is 150 mL, which is way way way more than required for my recipe.

I rarely cook with brandy and I don't drink it. If we don't have any brandy in the house, I'm probably going to have to go without or bite the bullet and buy the 150 mL bottle. Yes, that bottle can easily last until the next remote time I need brandy, but that's not the point (and after a while you tend to forget all the leftover stuff you got last time)

The original recipe actually calls for calvados, but not only is that more expensive, but there's no chance of getting that in a small measure at all.

I checked three bottle shops and the smallest brandy they sell is a 150 mL bottle. They have minis of almost everything else common - vodka, rum, whiskey - but not brandy.

Ordering online won't arrive in time.

so those who follow all protocols will, on average, stand a better chance than those who do not.

Correct. An agent will let the property to the tenant who is easiest to deal with. Of course agent information requests should be within the law.
