Looking for recommendations for a hotel near Sydney Airport for a 1 night stay in late Jan.

Arriving on the domestic side, departing international the next day. Need somewhere close to public transport that can get me to an appointment off Parramatta Rd near RPA (looks like a walk to Mascot station, train to Central, then a bus down Parramatta Rd?).
A hotel with shuttles to the terminals would be helpful.
It looks like most of the hotels are near the domestic side of the airport?

Most of the "sydney airport" hotels have a shuttle service for a fee, though the service is not run by the hotel.
Crowne Plaza and Pullman are good
Rydges T1 can't be beaten for location

Perhaps consider these which are not in the Airport precinct which may suit your Sydney appointment:
Rydges Camperdown - corner of Missenden Rd and Parramatta rd which is a close to RPA as you can get in terms of hotels.
Mercure Central station

Staying in "town" means you can avoid the shuttle fee and you are close to all the amenity you ever need such as King Street newtown (if staying at Rydges Camperdown), Broadway (central station) or Glebe restaurants .

The only other way to avoid a shuttle fee is Rydges at the T1

Saw an ad that the Moxy Airport sydney has a free shuttle bus!

Agree with quickstatus, a hotel near your appointment might be the easiest.

The train station is down the escalator at SYD Domestic, much closer than the 1.7km walk to Mascot train station.

Plenty of accommodation options in the city that may suit.

Also, there’s a train station at the International.

If you're taking PT near to somewhere near RPA then somewhere near Central might be a solid option. Lots of different choices there (chains, non chains, different price points). That leaves your luggage to be left conveniently at the hotel when you head out first and still be en-route back to the airport.

For the cheap PT option, 420/350 TO mascot station then train to central is indeed the option. To T1, its just the 420 from Mascot station (well technically you could go to Dom then take shuttle too).

Do NOT stay at the Moxy. The rooms are over-heated, they have no fridge of any kind and really poor water pressure. Stayed there once and vowed never again. I couldn't change the temperature and sweated through an entire night of sleeplessness...
