Is there a site which lists seat availability for domestic flights at all?

If you are looking for which specific seats are available, then no. For QF Domestic flights, seat allocats are performed by the computer in the wee hours of the morning of the flight.

If you are wanting to know about the availability of seats for purchase in the various fare buckets, then have a look at:

To see what availability there is with fares side by side, try the updated Flight Centre booking engine www.flightcentre.com.au.

This allows you to book, eg, one way on Qantas and return on Virgin Blue, selecting the cheapest fare on each occasion.
