Would there be a problem if I book and pay for return flights to Africa for my husband and myself thus utilising the 2 for 1 deal but
then one of us decides not to use the final homeward flight?

If you seek a refund for the unused portion QF will recalculate the fare for the flights taken. I don't know whether or how this might operate in the context of the 2 for 1 deal. But it seems unlikely that they could force you to pay more. I wouldn't seek a refund until you are back home, just to be safe.
