I can now honestly say that I have tried Hare. It was beautifully presented, but the meat was a little "gamey" and chewy for my tastes.

Now penegal, many many years ago (in my long-haired hippy days) when I drove around in a VW Kombi for a year round Europe, I was driving one night in Corfu when a ginormous hare jumped out in front of me, was dazed by the headlights and was even more dazed (permanently) when it made contact with the Kombi. I stopped, my mate jumped out and retrieved it and we skinned, gutted and hung it that night. Next day we cooked it slowly with veggies, stewed slowly in a pot on our 2-burner stove for many hours. From what I remember, and the 70s (and 60s for that matter) is a little hazy, it was bewdiful accompanied by the local Greek wine. So to get to the crux of this dissertation, perhaps a suggestion could be made to the chef that as part of the hare's preparation process, that it be tenderised (in a loving manner) against the (sanitised) front bumper of a Kombi van? :shock:
 
I have both cooked hare and eaten it at a restaurant and neither time did I find it to be chewy. I think you lucked out there.
 
LOL Goononya, that post almost makes up for missing out today :p

The hare was certainly interesting, but the Tiramisu and dessert wine washed it down well. :)
