I'm new to the QFF just obtained silver and just wondering if I can obtain gold by using QFP someway

Qantas ASA's (Any Seat Awards) give status credits as well as FFP's, Classic Awards do not.

If I pay for say premium economy and use points to upgrade to business do you receive the extra SCs?

You get the SC and points for the class you paid for. In this case, you would get premium economy SC and points.

Yes - Qantas have two types of award seats - Classic Awards and Any Seat Awards (ASA's). ASA's give status credits and frequent flyer points. The point "cost" of the ASA's will vary based on seat availability, whereas the number of Classic Awards and their point cost is set. You can also use a mix of points and cash to buy the ASA's.
