Regrettably I am not as much a FF as I once was but I am still accumulating thousands of points.

What would be the drill in gifting a few hundred thousand to my soon-to-be-21 son? I think there are limits but can the total be added to in increments?

What would be the best way for him to start as a QF FF and gain start-up bonus points? He is planning on going to Canada this next northern winter with some mates to work in the ski fields.

It is very easy - you can transfer Up to 100,000 points 4 times a year, so not too restrictive at all. I will let the experts comment on bonus points :)
