Presumably the pilots let the FA's know when its safe to dolly the meals-on- wheels from galley to forward/aft so that they can keep a firm thumb on the trim wheel:shock:
 
Most aircraft work on an average weight system for pax weight. There is a chart that helps work it out if it is done manually.

By simply moving 1 row back or forth can alter the Centre of Gravity. It really is a fine balance. When i did my licence you had to know how do to it

I was flying from Alice Springs to Melbourne (737-400) a couple of months ago and they moved 3 people further back from the row that they were in. They even went as far as printing new boarding passes and re-printing the manifest.

I assume that is so that they can identify the bodies in a crash and prove the justification for for compensation when something "was wrong with seat 37K"
 
Happened to me, wife & friend on a Egypt Air flight from Singapore to Sydney a few years ago. When we returned to our original seats from down the back some bloke was all stretched out & making himself comfy. Told the missus he wasn't moving till I had a friendly chat with him.
