I need your best wine recommendations. Red or white? Type of red/white? What meal pairs best with your favorite? Be as specific as you like; I’m into pairing good wines with my meals and buying bottles for the house.

My wife will probably do the same when I've gone to a better place (or not), but in the meantime I'm trying very hard to whittle down the garage full of decent wine. It's an onerous task, but someone has to do it.
