Do like friend of mine who hates smokers, carry a small water pistol in your bag and squirt them. Although I had to talk her out of loading it up with lighter fluid.

The chairs thing is very common, not just for surveying the buffet, but when they leave. Worse are the ones sitting behind you that push the chair out with full force... whack!

Surprised you didn't see a few pyjamas around the place, but maybe hotels do insist on some sorts of standards in the public areas of the property.

WCMO etiquette around hotel breakfast:

• Tea/coffee station where you take a spoon or stirrer to finish off your tea/coffee... the used spoons or stirrers are discarded haphazardly all over the station, rather than in the designated bowl/container or bin.
• A plate is left in front of a serving tray of hot food (e.g. scrambled eggs) for resting the serving spoon or tongs. Instead, some oaf leaves it in the serving tray / bowl. Not only churlish, but no one likes picking up a blazing hot serving spoon/ladle.
• People who use the same serving utensil for more than one dish, when there are clearly separate serving utensils for each. Usually done by lazy or impatient gits.
• People who don't pick up their toasted bakery items from the rotating toaster. I'm not talking about coming back from other parts of the buffet, I mean they don't pick them up.
• People who change the setting on the rotating toaster.

UPDATE:
Head Concierge with whom I had been communicating via email extensively prior to trip finally met face to face today. Asked for honest feedback so I gave it (in Italian and in detail) whilst waiting for the shuttle service into central Florence. Many of the other couples waiting were the worst offenders re:smoking at pool. That part was enjoyable
He agreed I had a point and that non-smokers were being forced to passively smoke or go to their rooms. He conceded Italian attitudes are very hard to shift in this regard
But he listened
