Just wondering why no airlines (to my best knowledge) have installed flip-up seats like in a cinema?

I would have thought that this would be a good idea in the cramped space known as Y and would make cleaning the aircraft easier too.

I presume it is to do with crashworthiness, but - lots of airlines have such flip up seats installed - but they are the crew seats - with multi-point safety harness, and tend to be firmly attached to bulk heads, and often facing backwards.
