What is a "spoilage fee"?

Mrs Cat and kitten minor flying JQ to Sydney this weekend, flexible fare. Rang to change flights earlier this week and their booking now refers to a "spoilage fee" of $30 each. I've done a quick online search but can't find out what this actually means. Anyone here able to enlighten me?
 
I believe its the difference between the old fare and the new fare where the new fare is cheaper. Naturally the airline keeps the fare difference but calls it a spoilage fee.

I've got a spoilage fee of -$0.92c on a half price Virgin Flexi Fare (which is also upgraded to J using half price points!). Odd term to use. Spoilage makes sense in a retail environment, but not with airfares!
 
i imagine it's in an inventory context, ie you changed to a new flight so they may not be able to re-sell that seat and therefore charge you for the loss
 
It's a charge they slug you with when you spew your guts all over the cabin after eating Jetstar food...

Much the same as a taxi spoilage fee.

Or in my case Virgin business food. If I get that tofu green curry again LOL...
