What I ate today - the food thread

That Jewel Rice looked so nice that I looked at the recipe - I now have to get my courage up to have a go. My last attempt at Biryani Rice was so disastrous that I am a very cautious about trying to make this dish.

The rich contrasts of flavours and textures are amazing - the nuts, orange zest, caramelised carrots, and cranberries etc - yum. You can be creative and change the ingredients to suit yourself - different nuts, ratios etc. A real hit with guests as well (when we used to have them - still in self imposed iso except for Whatsapp dinners parties)

Forgot to take pic but I made satay chicken last night, first time Ive made satay. Was a bit shocked by all the recipes saying use peanut butter  but then I found others with coconut milk, curry powder ect and pretty happy with how it turned out. Was hoping for left overs to use in pies for the weekend but no left overs once hubby got stuck into it.

This weekends experiment will be slow cooker minestrone soup with ham hock.... wish me luck.

So it was a peanut-less satay?

Was planning slow cooked oven spare ribs tonight. Had them in freezer for quite a long time. On opening the stink was exceptional. Even after an hour in oven, stank the house out. Binned.😤

Reverting to Pamela’s Pantry chicken cacciatore!

Dinner at my sons house last night - not for me as I hate Crayfish, Lobsters etc. My wife said she preferred it to crayfish as it seemed a bit sweeter and softer.

Freshwater Marron he brought back from Bridgetown in the South West of W.A.

The end result. They were put in a freezer to anaesthetise them before killing and cooking.

I'm with you. Just looking at them reminds me of movies like Aliens. Shudder. 😖
