I have just checked in online for DJ855 scheduled to depart at 15:00 tomorrow, and it worked perfectly.

But when I tried to check in for my return flight which is leaving Sydney at 19:45 also on the Tuesday, I am getting an error saying "We are unable to check you in at this time". Why is it that it worked for my flight to Sydney and not the flight back?

Oh yes, completely slipped my mind. That is pretty stupid, Qantas allow you to check in for both flights. It would make it a lot easier for Virgin Blue to do the same.

I've always wondered. If I'm flying SYD-MEL-SYD on the same day, and check in for both my outbound and return flight, can I change my flight later? Assuming I'm flying a flexible ticket of course.

I've always assumed once you've checked in, you can't change your ticket.

I cannot speak for Virgin but on Qantas you can certainly change your flight after you've checked in online.

My experience has been that you can change your flight, but you can't do it online as it requires a DJ staff member to un-check you in on the original flight prior to changing the flight.
