i'm flying SYD - SFO tomorrow with Lufthansa on United metal. I'm currently checking in on the united website, they have kindly alloced me a middle seat /s. Surprisingly, all the regular economy seats are occupied. The only available seats are the "economy plus" seats for $200+. 19 hours before the flight and every person in economy has checked in except myself? Is this normal practice?

you have already flown, but for future reference/others in your position... yes it's normal. But you should keep checking to see if any seats become available, or if they have anything at check-in.

A friend of mine did the trip last year, also in coach, and the same thing. They checked in online shortly after OLCI opened (like about an hour) and were lucky to score the last aisle seat.

I get economy plus for the economy fare as a United million miler; but I'd recommend them for $200 on very long flight. While everythign else is the same, the extra spacing between seats makes a real difference
 
You should be able to change your seat at check in - sometimes even into E+ free of charge. Do you hold any status within *A ?
