In Jan 2023 I've got to fly to Oz on EK from CAI to MEL via a two hour stop in DXB and my passport will have less than six months validity as it expires in May 2023 - will that be a problem? (plan is to apply for a new passport once I get to Oz - hopefully the wait time will be back to normal by then).

What passport is it and how long are you planning on staying for? If it’s Australian no problem. If not Australian then yes may be a problem - Australia just says must be valid for your stay but Emirates may have other ideas. Prepare to argue your case If you’re staying longer than May 23.

No issues .
Need 6 months if visiting UAE (1 month tourist visa)
Need 3 months if a transit visa (96hr visa) is required. Passengers transiting for more than 8hrs are eligible for transit visa
As you are only 2 hrs and remaining in the airport. you are not requiring any visa of any sort so not an issue. Assuming AU passport
