Are there any other viable ways of travelling from Sydney to Santiago other than by Qantas/LAN?

The other airline flying direct from SYD to South America would be Aerolineas Argentina via Buenos Aires.
And also Malaysian offers some ridiculously cheap fares to Buenos Aires via KUL and South Africa.

There are also other options on North American carriers via the US or Canada.
 
Aerolineas, via Buenos Aires, usually pretty cheap, and I have flown them quite a few times. Not a great airline though, even in business, but especially in economy. Lan is a lot better, and much more direct, but usually a lot more expensive.

Sometime BA have a RTW special (try bestflights.com.au - I have seen it there before). I think it goes something like SYD-SIN-LHR-EZE-SAN-SYD using QF & BA codeshares. Probably works out more expensive than LAN direct though.

Sadly, there aren't a lot of options going direct that will get you to South America until QF start a service supposedly by Nov 08.

QF009 has pointed out most of the options but I remember seeing a rediculously cheap fare with South African Airlines which allowed travel with SA/QF to JNB and then with SA onto South America. Your TA should be able to tell you whether this is still available.

As QF009 mentioned, AA can sometimes have cheap fares with QF to LAX and then AA or LAN onto South America but if you can get the $1799+++ fares with LAN, these won't be comparable.

Bestflights currently have a fare with travel on Air Tahiti Nui and LAN for $1779 + taxes which seems quite reasonable with travel via Tahiti. Australian Travel Agent : Best Flights - discount travel - Travel Agent Australia
