Wouldn't a date change count as a Change and therefore be priced at 3500 points per passenger - rather than cancelling and booking again?

Yes, but you would require U class available on the target flight which may not be the case later.

I'm suggesting booking on more than one flight and cancelling the one not used.

Book and book again at 353 days for around the dates and times you would expect to travel ... it's only a 5k point cancelation fee ...
Good point. Book now and if you need any changes later then it is only 3,500 QFF points to change or as you say 5,000 QFF points to cancel.

Wouldn't want to do that very often though as that is throwing QFF points away.

What have AAdvantage miles got to do with it? You can't book with them at 353 days ...
Nothing to do with it. Just highlighting the fact that Qantas is not releasing that many premium awards.
