just checked inseat map and its this layoutSeatGuru Seat Map Emirates Airbus A380-800 (388) Two Class
I agree, I'd be very surprised if Emirates downgraded this route to two classes.I highly doubt you'll have a two class bird.

That's how it's layed out on Qantas website.
I'm flying QF8763 AKL-SYD in J with my wife and 2-year old daughter on Monday. The strategy we have chosen is one adult in seat A, the kid in E and another adult right next to them in F, as we like to sandwich her between us. I'll report back on our experience next week.
As you can tell from the seat map NZflygirl posted, the E & F seats are right next to each other (and much closer together than D & G), so the E & F pair would seem to be the obvious choice for the child and one of the adults in your party (from experience, a 2-year old needs pretty much constant help with the IFE, toys falling on the ground, eating etc. so it's good to be as close as one can). The second adult will never be all that close, but the A & K seats next to E & F again seem like the obvious choices.
