Thanks @TheInsider and @Princess Fiona - I also added my conundrum with the seat selection. I'm supposed to be 11A on the B789 and the seat map on my booking now only shows the A332 map with 4A being the only option available.

I called QF and the agents I'm speaking to still think it is only 1 aircraft going all the way to London. They have no clue on what is going on. How do I ensure the correct seats on both flights?
Your selection for PER-LHR should stick.
Where there is a change of aircraft but same flight number, MMB only usually shows the seat on the first sector. There isn’t the option to see the seating on the second as they are the same flight number.

So if I go and select seat 4A for example on the A332 from MEL-PER, I'll still have 11A from PER-LHR?

I'm 10 mins from MEL airport - would it be prudent of me to go the airport tomorrow and talk to QF staff there who are able to sort out operational items like this? The staff on the line are absolutely hopeless.

Nope, staff won't have access until around the day of departure (well -80 hours, but they generally won't assist unless it's on the day).
