Tender squid is the biggest indicator of frozen.
Fresh squid has a firmer texture - which is how it should be. Cooked squid should not be tender (easy to eat yes but not soft).

I had the S&P squid in the LHR lounge the other day and enjoyed it. Looking forward to having some more on my next international trip.
 
Some people actually don't like much in the way of spice. The Western palette is not used to a lot of spice in our diets. So I think QF would be catering to the majority, not those from backgrounds where spice is in pretty much all of their food.

What I would consider very hot, someone from a background where they have a lot of spice in their diet might consider mild.

As someone from such a background, I can confirm that the spice level of the food served in the lounges, flights can be safely categorised as "mild". It literally is a "touch of spice" ...

Last week, I had to load up my mapo tofu & eggplant at MEL J with chilli paste to make it meet my standards of chilli :p

I see the videos of Jamie Oliver & other western chefs and they say "a pinch of chilli is all you need to elevate this dish" and I'm like "come on mate, not really, a heaped tablespoon of chilli will give it the right kick" 🤣
