It's truffle season in WA. Go to is aged Neb or Burgundy to match that earthiness of the truffles.

Started the night with champagne of course. 2018 disgorged yet still so fresh

Squash and potato soup with shaved truffle matched well with the Jura. They do say dry sherry is a good match to soup in general, so unsurprisingly this went well.

But this backup was singing and in a really good spot. Decanted for about 6 hours but probably didn't need it. The air didnt do it any harm.20260627_180014.jpg

The '82 was decanted for about 8 hours and just glorious. Had stood up in the cellar for five days prior and just as well. Checkout the sludge left in the bottle. There was still more in the bottle that only came out after rinsing with water. Carefully decanted the wine to keep it nice and clean.
