The only buffet (salad bar) I can recommend in Vegas is Texas de Brazil Las Vegas | Texas De Brazil

When the salad bar has a wheel of Parmigiano Reggiano for open shaving - it gets my vote.

If you like meat & plenty of it - this place is for you!

Not fair…. I was thinking of dropping the TDB card, but the drool factor was just too much

The Vegas Texas De Brazil is my favourite TDB location, followed by Tampa then Orlando (and YES, I love my Churrascaria…)
The wine wall is something to behold… (when not expecting the Gaucho's to line up with there offerings)
 
We tried a few of the buffets in vegas last december/jan...my favourites were the aria and cosmopolitan...they were more expensive than the others but food was better quality. Can't remember which one, but one of them had a mac and cheese bar, a nice twist to a relatively basic but tasty meal.

We hit TDB Vegas last week - yummy as always!

Another great restaurant is MESA Grill by Bobby Flay.
 
Stripsteak at Mandalay Bay is awesome, I'm also another +1 for the buffet at the Bellagio.

Staying at Aria in Feb, never eaten there before so I'll give my report back then.

I wanted to alert my daughters currently there. I've recommended Bellagio for breakfast. Also recommend Komol Thai.

A few favorites:
1. Estiatorio Milos @ Cosmopolitan - They have one of the best lunch specials on the Strip... ~$22 for a three-course meal.
2. Lemongrass @ Aria - Good Thai food and nice vibe.
3. Buffet @ Aria - One of my favorite buffets on the Strip.
4. Wicked Spoon Buffet @ Cosmopolitan - One of my other favorite buffets on the Strip.
5. Holsteins @ Cosmopolitan - Good burgers and milkshakes.
6. Sushi House Goyemon (Off the Strip) - Really good AYCE sushi where you order a-la-carte.

If this is for your daughters, they will like the Cosmopolitan. I'd even recommend TAO at Venetian/Palazzo if they're into Asian food and an interesting dining atmosphere.. especially at night.
