Just noticed that for flights MEL-SIN, JQ has up their prices of the Business Max add-on from $200 to $500 .

I think it is that the Business Max prices are a fixed price that never seems to go on sale. So when the business fare goes on sale, the max price does not follow. So in effect the add on price for Business Max increases. I would guess that when the ordinary business fare returns to its normal price the cost of the business max add on will decrease.

True, but the Max fares have always been $699+$200 and there's no J sales to Singapore right now.

Buying the cheapest possible Sale Y fare then upgrading on the day still works though right? (Which should be the only way one finds ones self on JQ...)

Funny that it's actually cheaper from SIN these days... only $1480 AUD equivalent for the max bundle - although $300 AUD-equiv of which is the bundle itself.
