Thoughts on best “J” seats on Jetstar 787?

Solo traveller, daytime one way, overnight the other.

Holding 1F currently (on basis pairs are more likely to travel and select window pair, middle block on aisle gives ease of access for me and 50/50 whether middle seat traveller uses my aisle side for access , and indeed middle seat adjacent late to be filled (hopefully stays unfilled).

1F is not a good seat. It sticks out into the aisle and there is frequent disturbance from the curtain, passengers and crew as they walk past.

I took it once as the last non middle seat left, and while better than a middle, it was far below the side seats in row 1.

1AB GJ are the ones to go for, and there’s room to step over without the person in the aisle getting up.
 
Your logic is pretty solid:
- Couples are most likely to select the paired seats.
- The bathroom is on the left side of the plane meaning that anyone sitting in the middle seat is likely to exit to the left (Across the person sitting in row D).
- If there are any empty seats, it is most likely that the middle seat will remain vacant.

If you're comfortable sitting in Row F, you may want to consider Row 3. While Row 1 has the benefit of no one reclining into you, legroom is limited due to the bulkhead wall. If I remember correctly, the TV is stored in the armrest and means you will be watching it at an awkward angle.
Seat 3F is a good choice - there is no seat behind you, so you won’t be reclining into someone (if that is something you are conscious of). Also, on longer flights, seats 3G and 3J across the aisle are reserved and curtained off as a crew rest so you won't have anyone to your right.
Having said that, being in Row 3 could mean that your preferred meal choice is 'sold out 'by the time the flight attendant reaches your seat. If having your first choice of meal is important, Row 1 may be the better option.

If a quick exit is important, consider selecting a seat on the left side in Row C or D. The doors located behind Row 3A are used to disembark, so sitting on this side (particularly 3C or 3D) will mean a quick exit. But even if you're not seated on the left, cabin crew hold back economy passengers to allow business class to disembark first.
