Double wank. I recall seeing a documentary (or maybe a plain cooking show) about Heston Blumenthal's attempts to upgrade an airline's food. No doubt trying to keep up with Fred. There was a segment on how wine behaved and changed at altitude. So IIRC that would make most of these flowery descriptions irrelevant
