Currently, I've iMessage set up with 1 phone number and 2 email addresses and with the phone number being default.

When I swap to use another SIM card in another country, will iMessage automatically change to the new number? The new number will have data allowance.

In other words, will iMessage work the same way as I have it here without additional configuration changes when I change my SIM card?

iMessage follows the phone (or rather, your iCloud/iTunes account) as far as I know, not the SIM. I'm currently experimenting with a different phone so my iPhone has been sitting at home without a SIM in it, and it still receives iMessages.

iMessage is Apple's in-house app version of say Skype, Viber or Whatsapp etc. So as long as the mobile plan has a data plan then iMessage will be functional wherever the data network is active. So if you have a new number, then you will be using that number.

It depend's on where the message was sent to (receiving ID) for example, if one iDevice user sends it to your new mobile number (given that you've switched SIM's) you will not receive it. If you go into Settings > Messages > Send & Receive (IOS 6) and you have a email address listed on it along with your phone number, the user can send iMessages to that ID (email) and you will receive it, regardless of SIM/Number, provided you have an active data plan with iMessage activated.
