How to best get to Florida with points and travel credits

I have about 160k Velocity points and about $1200 Virgin travel bank. Looking to get 2 adults and 1 child to Florida (Orlando or Daytona Beach) and back in July. Obviously these points and credit aren't close to enough to covering it, however maximizing the value is the key.

This will be the first time flying with our now 4 year old, whilst I would normally look at business class options, however I don't want him to be in his own seat separated from us, therefore a premium economy option where we are all seated together might be the go. Trying to avoid economy if possible.

Frustratingly Virgin tell me I can't book premium economy using points+pay through them.

Need advice on how best to do this.

Google flights tells me Air Canada is good value for money and I think I can redeem Velocity points on them.
 
VFF - KF points transfers are coming back, but as to when, we don't know.
Can you bear it/afford to fly Y with UA via MEL?
Maybe slum it on UA if you must get to MIA, UA is the best.
Collect the points for the travel, and then build up the VFF points higher, then transfer it to KF for another holiday, maybe Japan or SEAsia after the US trip.
No eTA needed for a transit through Canada, lucky like that.
Can't say which is best, UA or AC, but probably for this trip, maybe flying straight into LAX/SFO and then city maybe 2 transits to MIA/ORL (edit, MCO, ORL is the executive airport at Orlando!) then where you have to go is better than flying up to Canada, and then down again to Florida.
Maybe when the boy is older, then take him up to Canada and see the Rockies/Canadian alps.
