I know you are able to use websites to see how many seats in each fare bucket are available for sale but is there any way of seeing how many seats in each fare bucket have already been sold ? EG can you find out how many award seats were sold in the J or F cabin on a particular flight?

Not without access to private company data - and those with such access would generally be in breach of their employment conditions if such information were to be revealed publicly.

Such information is not available publicly. It could only be found by someone with access to the airline's internal systems.
