Yep, you can buy them at HKG airport - right in the middle of the arrivals hall.

The costs HKD150 comprising a HKD50 deposit and HKD100 in stored value.

If you intend to employ the Airport Express I'd top it up with another HKD100 - 200. The first use of the airport express to, say, Central will cost HKD100, same day return costs zip, if you use it to return within 30 days it costs an additional HKD80.

On your departure, you can recover any stored value and deposit where you originally purchased it (Less HKD7 if with 30days).

If the ticket counter in the arrivals hall has a very long queue (as it did when I was there), you can go out to the train platform, turn left, and there was another counter there selling octopus cards, with a very short queue. :) (obviously this may not always be the case, but worth a try).
 
The card will be valid for 3 years from the last add value date I believe ...

I re-used one in Feb that had not been in Hong Kong since Oct '07 (it was sort of weird seeing the transactions from 15 month ago show up on the scanner).

I use mine twice a year maybe. Have not had any issues with expiry, but i never leave much value on them (i say them since i have a pair of them for when traveling with somebody).
I also have Icoca and Suica cards for JR West and JR East respectively although now both are applicable on both JR East & West.

So this leads to the inevitable - best way to//from airport question?

Can you buy Octopus card at airport and I presume the train is the cheapest/easiest way to/from airport, provided the hotel i choose is within a sensible distqance of a train station?

You can get an Octopus card at any MTR station and I guess the airport as well.

Airport Express is IMO the best way into the city. You can buy the ticket on the internet before you leave and pick it up when you get there. Most major hotels are served by a free shuttle from either Kowloon Station or Hong Kong station on the Island. The only drawback is that on some shuttle buses baggage handling is a bit awkward (usually the smaller buses).
