Wow, thanks @Katie - that's really helpful. Sounds pretty straightforward. A bit worried about the Sydney bit... 1h55 mins to get off the plane, find my way to the departure terminal and do all the customs stuff. Hope that's plenty of time.

Hopefully the QF transfer bus is operating, per @TheInsider 's comment.
 
Whenever you land in a new country (and have a domestic connection), you will have to get your bags, head through customs and re-check them.

So your bags will be checked through BNE-SYD-DFW. At SYD, it's only a terminal transfer (plus security and immigration).

At DFW you go through the whole US security theatre, and re-check your bags to MIA.

And even in the US, it is not a universal rule (for example flying in from Canada, Dublin or Abu Dhabi, where immigration is done prior to departure rather than on arrival). So bottom line, lots of variations on what the rules are.
