And how exactly are people (pilots?) supposed to respond to such warnings? Not like there is much they can do if some nutter decides today is their day for headlines.

I don't think pilots can respond to such a warning - short of refusing to fly the plane. If anything, it would have to be an airline management decision to suspend flights if they felt the threat was credible and immanent. It also provides passengers with information that they can use in forming their decision to fly out of Paris (although the threat could be easily replicated in many cities). But again - unless airlines respond by waiving change/cancellation fees, passengers may find themselves with few options.

So really not all that helpful then - other than stressing everyone out over something they probably cant change nor do anything about.

I agree - but I guess it does serve to increase vigilance from people living around the airport(s). And would probably mean the police would be rewady to respond quickly to any reports of suspicious behaviour.

It's a bit like the Prime Minister raising the threat level in Australia - not a lot the public can do about it - we don't have access to phone taps and computer taps (etc) that the intelligence services do. It just serves to put us on notice to be alert.
