My friend is working in the UAE. He entered on his AU passport, which has his entry visa stamp, residency permit etc.
He will need to leave that at the US embassy for a week to apply for a special visa.
During that time we want to travel.
Does anyone know if the UAE will let him leave and reenter using his Irish passport?

If he didn't enter on the Irish passport I imagine they would be rather curious as to how he got in to the UAE and how long he had been there. At the very least you would want a colour photocopy of the AU passport as well.

I'd be calling the UAE Embassy and ask them as he may not be able to get back into the UAE if his residency permit is in the passport that's not with him.

I'd definitely take a scanned copy of the passport photo page, UAE Residency permit plus the pages showing any UAE entry exit stamps.

Simple, just don't travel for that week whether you would like to or not. Your friend should be better organised.
Your friend's particular circumstances will mean "nada" to the UAE - their rule is that you have to accommodate their wishes, not the other way around.
Nobody, especially the UAE, is going to accept photocopies etc.

Can you ask the other embassy for the passport back temporarily, personally I wouldn't want to even try doing that there I've known the immigration officers to be rather grumpy in UAE.

Thanks for the responses.

Not really possible to avoid this through better organisation as he only has an extended period of non-flying days because he is submitting his passport for the visa approval.
I'll just travel elsewhere on my own.

I guess one option is he could briefly leave UAE on his AU passport, then re-enter on Irish as a tourist? (then leave again as tourist and re-enter on AU once passport has come back)

Unfortunately the AU passport is at the embassy. So can't leave on that passport.

Leaving on the Irish passport may present problems because there is no record of entry

The OP said "He will need to leave that at the US embassy for a week to apply for a special visa", i.e. the passport is not actually at the embassy yet...

I reckon the friend should go for it (ie leave and re-enter on the Irish passport.). Will make a good story and if reported back here, we'll be the wiser! ;)

oh I see. Yes - I guess that could work! (as long as the passport doesn't need a valid entry stamp in order to apply for the new visa)
