I'm flying into Brisbane early on Wednesday morning and will fly out mid afternoon same day to Auckland via Sydney on VA/NZ. How early can I check in for my flight in Brisbane before departure (as I'd like to ditch my suitcase on arrival into Brisbane and then see it again that night in Auckland if possible)?

Whats the linking like? PNR wise.
I have done ADL (first stage VA) to SYD to meet with an NZ flight.
2 hours is the one to aim for.
Your trip is more complicated than what mine was.
No OLCI for any VAd flights linked to an VAi/NZ flight, so you have to line up, or premium desk if you have status.
BNE the start of the TT flight, eh?
Or is it SYD the start of the TT flight?
If its the 9am VA BNE to SYD to meet the 3.45pm NZ flight, then its 7am for the airport check in.

Int short haul.

I'm on a VA domestic flight from Sydney to Brisbane and then on NZ108 (booked as a VA codeshare, operated by NZ) from Sydney to Auckland, all on the same PNR.

I'm pretty sure if you're all on the same PNR won't they just through-check your luggage to Auckland so you don't even have to see it in BNE?
You would then even get your boarding pass (maybe, maybe not if it's on NZ metal) in Sydney too?

You can checkin anytime, with the domestic leg being the facilitator in allowing that to happen.

Is that at the airport?

I have been unable to check in online for a domestic VA segment connecting to an international VA flight in the past.

Either based on my past experiences

I still don't know how some can succeed doing OLCI with VAd leading to VAi or NZ connection though.
With QF and EK, yes, you or I or anyone can do OLCI and then show passport for validation at airport, but with VA?
On separate PNR, ADL to SYD with VA, and no tie to that next NZ flight, (I wanted to get a 15.30 (pm) wide bodied a few months ago, but NZ then changed it to a narrow 320-I couldn't lose the flight fare and hotel, so had to take it), I was able to do OLCI with VA and then turn up at the NZ counter at (is it check in zone G) and had my passport validated then).
OP, count on 2 hours.
So let me get this right, you are flying early am (SYD - BNE VA) not linked to the next set of flights,, then (BNE - SYD - AKL VA flight first, then onto NZ flight)? Wow, well to each their own, you will be getting a lot of VA FF points and VA SC.
