Don't understand booking process

Trying to get my family from coughet(HKT) to Singapore(SIN) in late September. Trouble is we are a party of seven, all adults and I can manage to book 6 seats with Jetstar Asia for a low low price. But the moment I ask it to be seven the price jumps dramatically. WTF. So I have booked 6 seats and will just wait, they are the only seats taken on the aircraft to date. I just don't understand.
If anybody can explain why, this would be greatly appreciated. Earlier and later flights are cheap as??

What you most like are experiencing is your large booking exhausting the number of seats available in the cheaper fare bucket. Once they are exhausted the price will jump to the next level.

Just because seats haven't been allocated doesn't mean that you are the only ones on the flight. A lot of people will wait until OLCI and check in to get their seats allocated.
 
As above: Fare bucket restrictions. Buy 6 at the lower price and 1 at the higher. Try having 2 windows/web pages open in your web browser at the same time
 
Ask the airline to TCP the booking ( total complete party ) when you've made the final reservation. This will ensure your 'group' will be seated together. It basically marries the two separate bookings together.

I echo the advice given above. Trying playing around with 3 and 3 seats also and ask to get the reservations linked.

I wouldn't risk it on 3K (or any of the JQ airlines). I'd stump up for the advance seat selection to lock it into place well in advance.
