Combining tickets to Europe

I have a budget of up to $3400 for a return trip Sydney-Stockholm. Leaving mid May, returning mid June. I see that I can get a QF Prem Economy return to Hong Kong (the current sale), with a Finnair economy return to Stockholm for under this.

Is it possible to get this sort of combination on a single ticket - so that the airlines take responsibility for missed connections? If not, is a seven hour layover enough? Does travel insurance cover any costs associated with these sorts of missed connections?

Any other suggestions? Prefer Oneworld because I will have a lot of baggage (QF Silver) - and definitely don't want to fly Emirates 777 in economy.
 
Replying to my own question:

I did this and it worked out fine. Two separate tickets with the one booking number. One Qantas premium economy return Syd-Hkg, and one AY economy return Hkg-Stockholm.

On the way back the Finnair flight was delayed so I missed my Qantas connection. Finnair put me on a later Cathay flight in premium economy (not quite as good as Qantas, but good enough). Mind you, the Finnair back office originally changed my routing which meant I had an economy flight from Singapore to Sydney. But the ground staff fixed this when I complained.

One other thing to bear in mind. Despite my FF number being on my Finnair boarding pass I had to do a manual request to get my Qantas FF points.
