I'd like to buy some oysters in Tassie and take them up to the in-laws in NSW. Going though HBA, MEL and OOL on JQ and DJ. Can I pack them in a soft cooler bag with icepacks/frozen bricks and take them on board with me?

I believe it will need to be checked in, see plenty of eskys in DRW being checked in, dry ice being the way to go I suspect:

Carbon dioxide, solid (dry ice), in quantities not exceeding 2.5 kg (5lb) per passenger when used to pack perishables not subject to these Regulations in checked or carry-on baggage, provided the baggage (package) permits the release of carbon dioxide gas. Each item of checked baggage must be marked "dry ice" or "carbon dioxide, solid" and with the net weight of dry ice or an indication that there is 2.5kg or less dry ice.

I've taken fish back from DRW before, basic rules are :
1. Must be frozen, no ice or dry ice allowed
2. Must be sealed in foam containers (fish supplier has these)
3. Must be checked in and
4. At checkin, will be sealed again in an airline plastic bag.

At our oyster wholesaler on the Sunshine Coast I can buy Tasmanian oysters for the same price I can in Tasmania.
I do bring frozen curries,cherries and raspberries back in my carryon from Tassie though.

Dry Ice is permitted under the IATA DG regulations though it must be under 2.5 kg.
