If you use a trust they want the trust deed. Otherwise just need to be registered for GST.

This was my experience as a sole trader - being registered for GST was sufficient. Other than annual revenue nothing else was asked and nothing was requested to be provided.

Only if your business is large enough to have to lodge financial statements with ASIC, in which case you’d have no issues meeting the $75k threshold.

They could of course ask for proof but my experience and the experience of everyone else I’ve read online is that they do not.

They did not check anything at all when I applied. Could be wrong but I suspect they assume that anyone who is registered for GST is meeting the $75k revenue threshold.

You can register for GST with less than $75k of GST turnover but Amex seem to accept that no one would do that.
