Most properties in my experience include a bottle of wine (small or regular size) in the room, sometimes with snacks and/or water, with the welcome drink vouchers redeemable at the bar for house wine, beer. In NZ, specifically Novotel Wellington, they often have a platter of sweet treats in the room rather than drinks, but the interesting part is that the welcome drink vouchers are redeemable for a dollar value at the bar ($15 per voucher I believe), which means you can choose anything up to that value.

What do most people do?

We generally cash in our welcome drink vouchers on a cappuccino or similar.

Stayed again recently at the airport Pullmans SYD and BNE and both offered the same welcome house drink selection as they did in the executive lounge. (Platinum member).

Pullman Auckland airport. Any beer or house wine, and non-alcoholic drinks. No spirits.

Grand Mercure Roxy for the Welcome Drink alrhough didn't see a list but beer, wine and soft drinks offered.
In the Breez Bar aka their "Lounge" beer, wine soft drinks, mocktails and coughtails.

Pullman coughet Karon Beach, anything off this menu, chose ours from the bar at Seafarer Pool.
I had the Rosè and he had Dry Ginger Ale

Not being familiar with it @markis10 I did look it up and discovered it is from France!
We met the GM in the Panorama Lounge, he has visited many wineries in Australia as his sister lives here.
I have his email - will pen him a note.
Had it last night in the Lounge ( and at breakfast) slides down nicely.

Was that the welcome drink (that you use your vouchers for) or the welcome amentiy in the room? I've never been offered a whole bottle as a welcome drink!

Definitely welcome drink as was asked at check in what I wanted (red, white or water). Welcome amenity were the 3x chocolate bars (1x rocky road and 2x coconut slices)

Some hotels ask that now as part of your welcome amenity.
On checking in they will ask what type of wine you prefer. You should still get your welcome drink vouchers separately via the app

Mercure Bankstown is one where you don’t get the vouchers via app. Instead it says something along the lines of “welcome drink options will be provided at check in”

yeah some kind of licensing thing there with the associated club I think

Have had that at Mantra On Russell last year and Mercure Soutbank as their bar wasn't open @Seat0B
From memory Ate and Legacy white wines but did have a choice of red or white
