Are there any good databases of economy seat widths for long-haul flights? The seatguru page Long-haul Economy Class Comparison Charti - SeatGuru doesn't seem very accurate, presumably because there is no standard way of measuring widths. My preferred measure is be a width-pitch (distance to same point on each seat).

More specifically, which airlines would you recommend to avoid 777 10-across and 787 9-across for Sydney-London and Sydney-Stockholm? So far Singapore and JAL seem to be options.

For width JAL wins with their ‘skywider’ seat, particularly on their 787s.

For all other carriers the main ones to avoid are 787s, 777s with 10 abreast (many carriers these days, but some asian ones such as Singapore, Korean and Thai aren’t quite there yet), and in very limited circumstances, a330s with 9 abreast (low cost carriers, most notably Air Asia).
