With all that I still was not sure I had it all.

Easiest way to fix it is to change your APN in the data settings. Set it to random gibberish and it will not work. Then when you return, you can just set it back to what it was. It's the best way of being sure.

On the iPhone surely you just have to go to Setttings/General/Network and toggle Enable 3G and Cellular data both to off?

Turning off data roaming will do. The paranoid among us will also turn off cellular data when we leave the country.

You should leave enable 3G on or you will limit the networks you can connect on to only 2g ones.
