If you do decide sleep is the priority, there is also a Mariott and Novotel close by in addition to the Airport Regal.
If I had 6 hours in Hong Kong I wouldn't be sleeping, very easy city to get to and plenty of great stuff to do IMO. Hong Kong one of my favourite cities, even If you just walk around downtown and find a good meal worth doing.

The OP is arriving the night before, leaving PM next day and expects to have 6 hours awake, my reference to sleep being a priority on arrival is to consider airport friendly hotels versus the actual airport hotel.

I'm in HK right now about to leave tonight, but unfortunately have had zero sightseeing opportunities on this trip.
But if i had 8:30 to 1:30 in Central I'd do some of the following
1) Catch the Star Ferry over to TST and walk up Nathan Rd to some point.
2) Jump back into the MTR and get a train back to Centra
3) Spend the less than HKD$3 to sit on a tram and just go wherever it goes...a great way to view the city.
4) Go visit the Wan Chai computer market and see what wonderful tech gadgets are out there
5) Go to Causeway Bay and wander around the shops there, dont forget to grab a Lord Stowe Macanese Egg Tart from the Excelsior Hotel.

As long as you've got a loaded up Octopus card in HK, you'll find things to do :)
